The Rise of Sugar
Sugar's Nutrition
The food she would consume at home to heal her wounds was not much better than what she ate at school. At least, when compared to what people ate 100 years ago.
At the University of Colorado, according to Dr. Scott Stoll Ministries, a study revealed the nutrient density of food has fallen by nearly 50% over the last 100 years. The major factor of this, according to the New York Times Article, Breeding the Nutrition Out of Food, by Jo Robinson on May 25th, 2013, is that early farmers chose to grow plants which tasted sweeter, and were high in starch, oil, and sugar. Over time, this resulted in the degeneration of nutrients in fruits and vegetables. These same fruits and vegetables are used as ingredients in everyday food, depreciating their nutrient value.
While nutrient values have fallen, serving sizes have risen. Portion sizes have increased as well. While the food we are eating has less nutrients, we are eating more food than we did twenty years ago, according to Alex Jamieson's Delicious Vitality.
